Friday Already~

A new school year has just begun and Jax is loving being back in school. We had a fun and happy track out. It's the best track out Jax and I have had together. Jax and I spent lots of time just "being" with each other. Not planning too much to do and just sitting on the floor talking, doing legos (I hate them), reading for endless hours. Just nice.

I really like the cooking channel but now I love it. Jax has always LOVED the cooking channel!!! He has always enjoyed cooking and during this track out he started watching Paula Deen and now he is into all the shows big time.

BREAKFAST TRIFILE GRITS

I have always loved breakfast! My mom always had a breakfast for us whether is was wheat boiled on the wood stove, waffles, heavy whole wheat pancakes (my favorite and I wish I had that reciepe) and then the big breakfast of eggs, bacon, sausage, toast, etc.. We were watching Down Home with the Neely's and they made this breakfast. Great and southern! We made this recipe for dinner! Oh, it was soo good and Jax said, with egg all over his face, "Mom, I think I am gonna cry, this is soooo good!" I wanted to take a picture but I don't have any clear dishes to see how it looked. It's a great project for kids to build themselves and I think we will add this breakfast to our holiday traditions. All you do is put boiled eggs on the bottom, then layer sausage, then grits, then cheese and tomato. Easy and soooo good!

If you love hashbrowns as much as we do, Paula Dean has a great hashbrown casserole for breakfast!!! mmmmmmmmmmmmmmm........

Tonight for dessert we made fresh chocolate chip cookies with ice cream in the middle, much like this picture here. Jax found this picture on line.
I didn't try them. I don't like a lot of sugar other then in my soda. It needs to be a carb!

~This week was a extremely busy week with Jax starting school and home work. He is now selling the Entertainment books and I hate when stuff from school comes home to sell. I know! The PTA needs to make money but it's one more thing me to do or say no to Jax about.
~A new day care child comes monday and it's always exhausting for me to meet new parents, the child and are they good people, bad, etc.. call on their references, etc..
~ Jax has been wanting a dog since Max left and right now I don't want a dog. I don't want to pick up any more poop then I do all day , etc.. and so a man on craigslist was giving away a Cockatiel with his cage and a ton of supplies so we picked Simon up and he has been so entertaining. He is a mess. He has attached to me already. He whistles the sexy whistle when you see some one who is cute, he says "hello", "What are you doing", "kissy, kissy, kissy" and he makes the kissing noise. When you leave you say "Simon, we are leaving now." and he will say "Where are you going?". It's weird because he talks so clearly. He loves baths in the sink so Jax wants to bathe him constantly and he is very much a character. Tony and Linda really spent a lot of time on him.
